What's for Dinner?

Tonight I'm cooking one of our fav's for dinner and I thought I would share.

This is a favorite for several reasons:
1. It tastes good. Seriously. Everyone in our family LOVES this chicken. There will be no left overs.
2. I like it because you cook it in the crockpot. So, we're talkin' easy. Easy to cook and easy to clean up.

Ashley and I got this from Crockpot 365. I've made a few small adjustments, but nothing major.

BROWN SUGAR CHICKEN (a.k.a. CANDY CHICKEN)

-chicken breasts (about 5 or 6)
-1 cup brown sugar
-1/4 cup Sprite
-2/3 cup vinegar
-3 cloves garlic (This is one change. I use probably double. LOVE Garlic)
-2 Tablespoons Soy Sauce (I just pour some. Pour it all over the chicken)
- 1 tsp black pepper (Again, just sprinkle it on)

The original recipe says to put the chicken in the bottom of the crock pot and then throw everything else on top. I've started cooking the chicken in strips. It makes it easy to serve with the kids. And cutting it up also keeps the chicken moist and full of flavor!

Cook on high for about 3-4 hours. (If you cook the entire chicken breasts, cook for at least an hour longer). We serve over rice..... which brings me to my next topic.

Rice and noodles.
Brown or white rice? And regular or whole wheat pasta?

The Rooney familiy has tried. And now we are giving up. I know, gasp. Go ahead, gasp again.
This will probably royally defend some, and that is not my intention. But brown rice (unless it's fried) and whole wheat pasta stink. Seriously. They taste like crap. They might be healthy...but we are giving up. I've decided that as long as I'm cooking at home, its okay to have the fat full pasta and rice.

Look at the chinese and italians. The chinese eat white rice (and fried for that matter) and they live long healthy lives. And I don't know of any restaurants in Italy serving up whole wheat pasta.

That's why I choose to work out. I'm working my tail off at the gym trying to loose weight. I've lost 20 and have at least another 10-15 to go. And after I reach my goal, I will continue to work out so I can continue to eat white rice and pasta.....AND drink my CFA sweet tea.
